JOHN B. SHERRY

JOHN B. SHERRY

Group Chairman

John is a Fellow of Chartered Accountants Ireland. He spent 7 years in Saudi Arabia during the 1970’s and 1980s where he was Chief Executive of a World Leading Integrated Dairy & Food Business. In 1984 he joined LydonHouse Catering and led a management buy-out in 1987 at which time he became Group Chairman. Outside of work, John is actively involved in a number of clubs and societies in Galway. He is a former president of Galwegians RFC, a season ticket holder with Connacht Rugby, a keen golfer in Galway Golf Club and enjoys fishing on Lough Corrib.

NOEL O’GRADY

Managing Director

Noel is our Managing Director and has been with the company since 1999. He heads up our operations department. A graduate of GMIT, Noel is a qualified Chef and has gained Diplomas in Hotel & Catering Management; Business Studies and Quality Management. He has over 30 years’ experience and has worked for some of the largest Contract Caterers in Ireland and Great Britain. Originally from Limerick, Noel has become an adopted Galway man. Outside of work he is involved in Corinthians RFC where his son Jack plays on the under 12s.

ANDREW SHERRY

ANDREW SHERRY

Financial Director

Andrew is an Associate of Chartered Accountants Ireland. He spent much of his youth working for LydonHouse Catering, he went to Dublin where he attended DIT to achieve a B.Sc (mgmt.). Following this, Andrew qualified as an Accountant in a medium sized Dublin practice. He then spent some time with a top five firm in the country and then worked with a publicly listed Technology company before returning to LydonHouse Catering in 2019. Andrew has represented Connacht Rugby at various levels up to Under20s and is a season ticket holder. He played with Galwegians, Cistercian College Roscrea and Terenure College RFC. Since he finished playing rugby, he is attempting to play golf in Galway Golf Club.

MICHAEL FLYNN

Executive Chef

Mike trained in Athlone RTC under the excellent stewardship Jack Ryan.
The start of his career was spent working in the Midland where he gathered a wealth of knowledge from on-the-job training.
In 1994 mike moved to Galway and started working in Donnelly’s of Barna where he worked as sous chef for four years,
He then went on to work for choice hotels as a Head chef during this time Mike upskilled in a number of areas where he became a trainer resulting in him delivering Manual handling, health and safety and food safety training to all staff,
Mike also completed a joint pilot training program between Failte Ireland and Choice hotels called Elevation which offered participant’s the opportunity to complete a management program while continuing to work full time.
He went on to work for Musgrave for 15 years firstly as a business development manager and them progressing into the roll as area sales manager this gave mike a further opportunity to widen his skillset and gain further experience’s.
Our goal is to use local Irish product sustainably produced and sourced through Irish suppliers.

Fiona is a graduate of NUIG having obtained a BSc Degree & HDip in Health & Safety. She joined the company in 2002 and has progressed through various different roles to become our Director of Hospitality Services. She oversees the planning, selling & management of our corporate packages from initial contact to delivery and customer follow up.

HR Manager

Una is the Human Resources and Safety Manager for the Group. She holds an MA in Human Resources Strategic Management and has over 20 years of practical experience working in the areas of Recruitment, Training, Employment Legislation and Workplace Safety. She is also a qualified training instructor, with specific qualifications in the areas of Manual Handling and Ergonomic assessment.
Prior to joining Lydon House Catering in 2016, Una worked in HR and General Management roles within various sectors in Ireland and the UK and possesses a range of transferrable skills and knowledge which add value to our business potential.

OISIN COLLINS

Catering Manager

Oisin is our Operations Manager and will be the man on site. Originally from Mullingar, Oisin attended GMIT where he achieved a Higher Certificate in Culinary Arts. Following this, Oisin worked as a chef in various different locations throughout the East of the country progressing through the ranks. Oisin then decided to return to GMIT where he studied for a Bachelor of Arts in Hotel & Catering Management. It was while studying that he got the travel bug and decided to travel to Canada where he experienced the beverage side of the trade.
